A week ago I picked up a $15 spirializer from Target and it has completely changed my lunch and dinner routine. I’ve mostly been using it for zucchini noodles, but you can use the spiralizer with beets, carrots, potatoes, really anything. My go-to meal this week has been a simple veggie stir-fry. It only takes minutes to prepare, and it has kept me from having to throw out any uneaten produce, which is a huge win in my books.
If you haven’t hopped on the zucchini noodle bandwagon, give it a go. This has been my favorite combo so far:
1 tbsp of olive oil or avocado oil
1 red pepper
1 cup of sliced mushrooms
1 cup of shredded carrots
salt and pepper to taste
sautéed on medium heat
It’s seriously the easiest meal and only takes about 15 minutes. Plus filling up on veggies is always a better option than making a meal out of popcorn, which I am very guilty of.
